Producer Background:
Nestor and Adrian Lasso are brothers that run the family farm Finca El Diviso in Bruselas, Pitalito, in the southern part of Huila, Colombia. Using their education from SENA, a renowned coffee education institution in Latin America, and generational expertise, Nestor and Adrian reframe the approaches surrounding traditional practices of agronomy, representing an emerging generation of young producers in the region.

Ripe cherries with a brix reading (a measurement of sucrose concentration in a solution) between 24 - 26 degrees are collected in an anaerobic tank where the cherries sit for 24 - 48 hours filled with mossto, a juice made from compressed cherries containing bacteria and yeasts. The cherries are then de-pulped, separated from remaining mucilage, and laid out to dry on solar drying beds for 15 to 20 days, where it is routinely raked and rotated for even exposure and drying. In the final phase, the coffee is placed in sealed grainpro bags for another 15 days.
